Recipes For the Week

Fall is a time for comfort foods. Candles, fur throws, sitting by the fireplace and crusty bread.

I love fall, and I love their recipes. Here are some quick easy meals that everyone in your family will love, and easy enough on a weeknight so that you can spend time with your loved ones. xo ~CL

The Reuben

A fall go to and favorite is the rueben sanwhich.

Prep: 10 min Cook: 20 min Ready in: 30 min

Ingredients:

Butter

Rye Bread

Sauerkraut

Corned Beef

Swiss cheese

Thousand Island Dressing

1. Preheat large skillet.

Another great option is a panini press. (my favorite)

2. Lighty butter both sides of bread, and on the inside line with dressing.

Fill will a generous helping of beef, and a few slices of swiss and top off with either saurkraut or horseradish.

3. Grill flipping to either side until cheese is melted and bread is toasted. About 15 minutes.

Serve with a pickle and chips.

Mac + Cheese

Ingredients:

Pasta ( shapes with texture are better because it holds the cheese. Think Rotini)

Cheddar Cheese

Heavy Cream

1. Boil Pasta set aside, and drain.

2. In a saucepan melt a cup of cheddar cheese, adding other cheeses of your choice.

2. Slowly mix in 1/4 cup heavy cream with a tsp. of butter and light salt to taste.

3. Once cheese is mixed to smooth texture add Pasta!

If you want to go one step further, pour macaroni into a baking dish and sprinkle pre mixed oil and bread crumbs on top and set into oven set at 350 degrees and heat until bread crumbs have reached golden brown.

Turkey + Cheddar Apple

This is by far my FAVORITE fall sammich.

And all you need is a few simple ingredients:

Turkey

Cheddar ( or Brie )

Apple Slices

Place Sliced or fresh carved turky, cheese ( melt if preffered) and apple slices in between two slices of your favorite bread.

Lightly butter both sides, and heat evenly on both sides on a skillet until cheese is melted.

Add mustard if desired.

Serve with a pickle and chips.

Stay tuned for more weekend recipes, and enjoy your workweek! xo ~CL
